Serves 10 servings

Ingredients for the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Premix (makes 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

Making the Syrup: Combine the listed ingredients into a pot, heat until it reaches a light boil, stirring so the sugar melts. After that, remove from the heat and leave to reach room temperature entirely. Decant to a sterilised bottle, close it and store chilled, it can be stored for around one month.

For the Cocktail Base: Combine all the liquids in a big jug, allow it to infuse for 60 minutes, then strain best through cheesecloth, so it's fully clarified.

To serve: Add 85ml from the cocktail base into your cocktail shaker containing ice, and stir gently for one minute to cool it down. Filter into a chilled martini glass or equivalent, top with the cranberries adding the final touch by giving it a brief mist of mandarin oil over the drink.
